Heatdenatured collagen, called gelatin, is also widely used as a raw material for pharmaceuticals, cosmetics, and foods. In this study, a new extraction method was developed to increase the efficiency of gelatin extraction from hard fish scales. When the fish scales were crushed for 2min and then pocessed under vacuum at 40℃ and-30 kPa in dilute hydrochloric acid, gelatin could be extacted in 64.8% yield.
