For the implementation of machine learning, the supervised learning method k-nearest neighbors (k-NN) is adopted. Before applying k-NN, various dimensionality reduction algorithms are used to enhance the efficiency and accuracy of data processing. As a result of evaluating 18 kinds of soy sauce, integrating odor and taste data led to an improvement in the accuracy of correctly distinguishing \"sweet,\" \"rich,\" and \"light\" flavors.
